My kids fell in love with a bag of chocolate "healthy" snacks with “super seeds” from one of the big box retailers. Convinced that I could make something as good for half the cost, I started to do a little thinking. But first, are these really all that "healthy"? From what I can tell, the answer is an emphatic yes!

Nuts and seeds are a great source of protein, fiber, and heart-healthy fats. High quality dark chocolate is an excellent source of antioxidants and almonds are high in calcium, magnesium, fiber and vitamin E. This recipe also contains no added sugar, except for what is found in the chocolate and coconut. So, YES! These are HEALTHY!

This recipe will make almost precisely one lb. I recommend doubling it!

Ingredients

7 oz. high-quality dark chocolate, 64% Cacao or more, slivered

2.5 oz. almonds, slivered

3 oz. unsalted pumpkin seeds

1.25 oz. sunflower seeds

1.25 oz. chia seeds

1 oz. coconut flakes

1/4 tsp. sea salt, divided

Instructions

  1. Line a baking sheet with parchment paper.

  2. Temper the chocolate: Carefully melt chocolate in microwave, in bursts of 30 seconds on medium-high, checking and stirring between. Once chocolate is mostly melted, stir until all remaining chocolate is melted and smooth.

  3. Into the chocolate, mix in almonds, pumpkin seeds, sunflower seeds, chia seeds, and 1/8 tsp. sea salt until well coated.

  4. Drop "bites" of chocolate/almond/seed mixture on parchment paper. Set aside to cool and sprinkle remaining sea salt on top.
